We need a good refrence image to start modeling in 3d software, Either carefully take pictures of your model or google it. When i was working with crest animation studios ,other team who was working on casper project , they modelled it in clay to easily locate the bodily forms , however production budget allows if we can afford clay model and scan it. Big budget Hollywood movies they spend lot of money on new technology to get closer to the realism , I found this amazing step by step tutorial of Iron man head modelling, It is done in max but using this technique you can start in any software like MAYA,Cinema4D, modo, houdini.
